Authority basis for the choices
This page distinguishes authority guidance from our own recipe choices. Authority guidance supports hygiene, cooling, refrigerator temperature, the honey warning for infants and dental-health advice. The temperatures used in our preserving final processing are our recipe choice, informed by technical juice/hot-fill background, but are not presented as a validated commercial process.
- Norwegian Food Safety Authority – Kitchen hygiene – hands, clean utensils, heating/cooling and refrigerator ≤4 °C
- Norwegian Food Safety Authority – Food storage – refrigerator temperature, separation and cooling
- Norwegian Food Safety Authority – Honey and infant botulism – no honey for children under one year
- Norwegian Directorate of Health – Dental health – reduce frequent intake of acidic drinks
- FDA – Juice HACCP guidance – technical hot-fill background; not Norwegian home-kitchen guidance
Technical background – not an authority instruction for our home kitchen: FDA guidance provides an example of commercial juice being heat-treated around 90 °C and hot-filled around 85 °C. We use this only as technical background for our chosen temperatures. Our recipe is not laboratory-validated, not shelf-stable and must remain refrigerated.
